The story

The manager points to the auger in the drawing. ‘This turning screw carries the olive pomace towards the collection point.’

‘Do you throw it away then?’ asks Leo. ‘We do not leave it just anywhere,’ Giulio replies. ‘We collect it and move it with suitable equipment. Adults choose a permitted destination.’

‘Some routes allow these materials to be used again,’ the manager adds. ‘Recovering them takes organised work.

Simply spreading them on the ground is not enough.’

Rumo looks at the olive grove. ‘Even the parts that do not become oil have a story to follow.’

Giulio points to the closed container. ‘The wastewater from the olives takes a different route from the oil. We collect it. The operators move it in a suitable tanker.’

‘Is it drinking water?’ asks Ada. ‘No. It is a liquid from processing. Adults with the right knowledge must manage it.’

‘In the farming process we are describing, controlled spreading on land can be shown only where it is permitted and suitable for that place,’ Giulio explains. ‘The amounts, timing and land must be assessed. The liquid must not reach streams or other watercourses.’

The manager also mentions the washing water. ‘During our visit, we keep the origins of the liquids clear. Adults check how each liquid must be collected and managed.’

Tila shares Sami's question: ‘Why so much care?’ ‘To protect the soil, plants and water,’ Giulio replies.

Let’s talk about it

Can the mill's leftover materials be left just anywhere?

One possible answer

No. They must be managed correctly. Any recovery needs suitable conditions, processing and rules.

A little activity
