Volume II · Scene 10 of 30
Time and temperature are checked

Water at room temperature
‘At our olive mill, we use water at room temperature,’ Giulio explains.
‘We take care to protect the oil’s aromas and flavour.’

There is a control panel beside the machine. Leo thinks of a cooking pot. ‘Does the oil come out when it boils?’ Rumo has listened to the explanation and replies, ‘We do not boil the paste here to obtain oil.’ The woman in charge confirms this. Time and temperature are checked because working conditions affect the product. Neri explains that mills can have different features. Learning one number is not enough to apply it to every machine. Ada draws a clock and a thermometer without writing measurements she does not know. Sami leaves room for questions. Care is visible not only in big movements, but also in the adults’ quiet checks.
Giulio recalls the farm’s choice. ‘In our process, we use water at room temperature. We want to preserve the oil’s flavours.’
Let’s talk about it
Do we need to boil the olive paste to obtain oil?
One possible answer
No. The oil is separated by physical and mechanical processes. The adults also check processing time and temperature.
A little activity
Our notebook — Find the clock and thermometer in the diagram. There is no need for hot water, cookers or heating tests.
