The paste moves slowly

The paste moves slowly
The malaxer slowly mixes the olive paste.
The small drops of oil can join together.
Then it will be easier to separate them.

The paste goes into the mixing machine, called a malaxer. The name is long, but the drawing shows a slow movement. The woman in charge points to the paddles. They mix the paste under the conditions chosen by the workers. ‘This helps small drops of oil meet and join together,’ she explains. ‘Larger drops are easier to separate.’ Leo brings two drawn circles closer with his finger. Ada draws a larger one in a second picture. Neri reminds them that it is a diagram, not a test on the table. Sami says ‘malaxation’.
Then he describes the movement in simple words. Rumo waits. At this stage, making things go faster is not the visitors’ job.
Let’s talk about it
Why is the paste mixed slowly?
One possible answer
To help small drops of oil join into larger drops, which are easier to separate.
A little activity
Our notebook — Draw some small drops and a larger drop beside them. It is a diagram to help us understand, not an oil extraction experiment.
